About the Author

Alison Pray opened Standard Baking Co. in 1995 with her husband, Matt James. Charmed by the neighborhood boulangeries and open-air markets of France, the two were inspired to bake their own artisanal breads and pastries, and recreate that same sense of community in Portland. Standard Baking Co. has been recognized in Bon Appétit, the New York Times, the Boston Globe, Travel & Leisure, and featured on National Public Radio.Tara Smith is a graduate of the Culinary Institute of America in Hyde Park, New York. After graduation, she served as a teaching assistant at the school’s award winning Apple Pie Café. She now is head pastry chef at Standard Baking Co.Illustrator: Photographer Sean Alonzo Harris works as a fine art, commercial, and editorial photographer based in Portland. He has been published in many magazines, including The Paris Review and Boston Magazine. He is a faculty member at the Maine Media Workshops.

So... I found the wonderful Standard Baking Co. on a recent trip to Portland; their Pain au Chocolat was amazing. Light, flaky, not the least bit of heaviness or greasy feel. The kind of food experience that you just keep raving about all day. The kind of experience that makes you think that an hour and a half in the car might not be a bad trade off for exquisite food.I am an enthusiastic home baker and the type of food nerd who has read cookbooks like storybooks since I was was old enough to do so. This cookbook has gorgeous photos of beautiful baked items, and I can vouch for the fact that they look just as lovely as they did in the display case at Standard.I made the croissant dough over Thanksgiving weekend and found that it yielded very successful results. I'm sure croissant dough is something that gets better as one works the recipe repeatedly, and I did find myself double and triple checking the timeline and instructions to make sure I was following carefully (something I rarely do with non-baked-good recipes). I have to say the recipe was explicit, well written, and it worked, even for a person who had zero experience with the rather tedious process. I have read other reviews citing the fact that weight measures are not provided, and, while that would be nice, it's easy enough to use a conversion table to accomplish this if one wishes. I don't think that a lost battle with the publisher means that the book is of no use to the serious baker.It is difficult to review a cookbook based on one recipe. I would have to say that croissant dough is one of the more difficult items in the book, and if success can be had the first time through with this, I am truly looking forward to trying some of the other recipes. Thank you to Allison and Tara for sharing the wealth!

I was excited to get this book and although Im sure the pastries from this bakery are wonderful I cannot say the same for the recipes I have tried thus far. Granted, it has only been three and I will be sure to return to improve my review if I try more and am impressed with the results. The scone recipes so far have not turned out that good considering all the great reviews I was expecting more. I am a pretty experienced baker and have made my fare share of scones but like I said I will try some more recipes in the near future.

Really great cookbook. And, if you are in Portland, ME... go to the bakery, you won't be sorry.

I love Standard Baking and am psyched to be able to make some of these delicious goodies at home. I've tried a number of the recipes and love most of them. An excellent resource for real bakers.

I have many dessert cookbooks. What i love about this book is i feel like i am walking into one of my favorite bakeries. The book instructs you how to make all those little pastries that you love getting with a hot cup of coffee and sitting down and reading the newspaper. These are not fancy desserts, just good old fashioned pastries.I found the book well written with easy to follow instructions. The only negative is the paper it is printed on. It is not glossy, has almost a newspaper feel. Do not be cooking and have to look up a recipe because you don't want to get anything on these pages. It is not coming off.

Love this bakery! If you are in Portland, ME, don't miss it. You will be glad you went there. Fini.

I love this book... I have made 4 recipes and they are awesome

Alison's little book is a delight. I'm not a cook, so I salivate over the pictures and read the ingredients, hoping I'll get the urge to try one of the recipes. I've tasted a wide assortment of Standard's fare and have never been disappointed. My grown sons are getting a copy for Christmas. I like the paper, as you're able to make notes in the margins, unlike the slick paper that prevents note taking. Good work, Alison!
